1 rack of lamb (6-8 cutlets)
¼ cup cilantro
¼ cup fresh parsley
¼ cup fresh mint
2 garlic cloves, minced
½ tsp sea salt
1 tbsp fresh lemon juice
1 tbsp avocado oil
2 tsp paprika
2 tsp cumin
½ tsp cayenne
1 tsp garam masala
1 tsp turmeric
1 tsp black pepper
1 tbsp Dijon mustard

Preheat oven to 425 degrees Fahrenheit.
Combine cilantro, parsley, mint, garlic, salt, lemon juice and oil in medium bowl. Set aside.
In a small bowl, combine remaining spices. Place lamb on a baking sheet and spread evenly with Dijon mustard. Next, evenly spread the lamb with the spice mixture. Top with fresh herb mixture and place in oven for 20 minutes for medium rare or 25 minutes for well done.

Remove from oven and let sit for 5 minutes.
Slice in half or in singles to serve.
