1 15 oz can black beans, rinsed and drained well
3 Tbsp organic, unrefined coconut oil, melted
½ cup unsweetened cocoa powder
Pinch of salt
½ tsp baking powder
1 tsp vanilla extract
½ cup coconut sugar
1/4 cup dark chocolate chips
2 tbsp natural nut butter (peanut, almond, cashew, etc)
Preheat oven to 350. Spray 8 X 8 pan with cooking oil.
In food processor, process black beans until smooth. Add eggs, oil, cocoa, salt, baking powder, vanilla and sugar. Process until smooth. Add ½ chocolate chips and stir. Transfer batter to pan and using a small spoon, drop small chunks of nut butter on top evenly. Using a knife, spread nut butter into swirls.
Bake for 30-35 minutes or until toothpick comes out clean!
